TAFE SA lecturer Gina Dal Santo teaches a range of subjects, including the Degree in Food Science and Nutrition, and the Diploma in Food Technology, but her main discipline and passion is cheese making. Gina’s Italian background and her passion for learning about food and cheese is what inspired her to become a Food Technologist.

Gina played a significant role in establishing the Artisan Cheese Making Academy of Australia, under the TAFE SA banner, in 2012 and she has been instrumental in introducing a Diploma in Cheese, which will launch in 2020.

Gina received the Dairy Industry Association Manufacturing Scholarship in 2011 and Winston Churchill Fellowship in 2015.
