Since beginning his apprenticeship, Joshua Nickl has been fortunate to work with some of the industry’s best pastry chefs.
Joshua enrolled at a Canberra based training organisation because he wanted to train under world-renowned teacher and prize-winning pastry chef Dammika Hatharasinghe.
Joshua regularly competes in industry competitions. His first competition was the Baking Association of Australia’s Pastry Apprentice of the Year in 2016 where he achieved third place. The prize pushed him to aim higher and learn more difficult skills. The following year he worked hard to top that achievement and became National Apprentice Pastry Chef of the Year in 2017.
In 2018, Joshua not only topped his class at Canberra Institute of Technology, he was awarded Most Outstanding Apprentice of All Trades. Joshua dedicates his spare time to train with the Australian Pastry Team for the Coupe Du Monde in France. In 2019, he travelled with the team as an understudy. The team was placed sixth, which is Australia's best result to date.
