Qualification: Certificate III in Meat Processing Retail Butcher

Two weeks after completing a Bachelor of Biomedicine at La Trobe University, Matthew realised his passion lay in the craftmanship of butchery. Drawing on his years as a ‘clean-up kid’ at a local butcher shop, Matthew decided to become a retail butcher.

As part of his apprenticeship, Matthew was enrolled in a Certificate III in Meat Processing (Retail Butcher) at William Angliss Institute and employed at Ashburton Meats.

Keen to adopt the paddock to plate philosophy, Matthew became a strong advocate for animal sustainability, promoting ethically sourced meat to customers. He spent many hours researching and developing new products to ensure no part of an animal was wasted.

Matthew became the first Australian to be named World Champion Butcher Apprentice at the 2022 World Butcher’s Challenge in the USA. He has been appointed to the Australian Butchers’ Guild Ambassador Program, and he has been promoted to Manager of Ashburton Meats.
